The Health Conscious Parent’s Favorite Egg Salad
This easy recipe can be made in under 5 minutes and enjoyed throughout the week. Simply grate your hard-boiled eggs (6 is usually sufficient) with a cheese grater, mix with 1/4-1/2 cup plain greek yogurt and 2 tbsp. of yellow mustard. Season to taste with salt and pepper and enjoy as a dip with pretzels or pita chips.
