The number of times this has happened to us is countless, meaning that the hangry mamatude set in, shortly after we left the house forcing us to scrounge the bottom of our bags for goldfish crumbs.
After one too many of these episodes we found an easy breakfast solution that was easy to snag out of the fridge when mornings got too chaotic for a peaceful sit-down meal.
Our favorite breakfast recipe has been through a number of tweaks until we stumbled upon the perfect mix of ingredients that has made these 3 overnight oats recipes IRRESISTIBLE!
As busy moms, we like meal-time solutions that are quick and easy. Anything that we can make ahead and have ready for the day is a win in our book. This overnight oats recipe can be made in a large batch on Sunday evenings and dished out into single servings in small mason jars. The best part is, this simple recipe lends itself to a variety of delicious toppings, changing up your daily breakfast and not leaving you bored with the same ol’ meal!
Overnight Oats 3 Ways: A Busy Mom’s Breakfast Solution:
Use this base recipe to make a large batch of overnight oats for the week. Then jazz it up with one of our three variations for the perfect breakfast solution a busy mom can’t pass up.
We’re going to let you in on a little secret ingredient that absolutely MAKES this recipe…(we aren’t being paid to tell you this, we are just genuinely obsessed with this yogurt, especially because it makes our overnight oats breakfast solution so darn delicious)..it’s Chobani Non-Fat Vanilla Blended Green Yogurt. It’s hard to argue with a product that has 40% less sugar than regular yogurt and is made with non-GMO ingredients.
Overnight Oats (this makes one serving):
1/3 cup Old Fashioned Oats (*Note: Quick Oats don’t seem to work as well. The consistency is different.*)
1 tbsp. Chia Seed
1/4 cup Chobani Non-Fat Vanilla Blended Greek Yogurt
1/2 cup unsweetened almond milk (any milk works)
1 tbsp. honey (optional)
Mix all the ingredients into a glass container and store in the refrigerator overnight. Be sure to stir the oat mixture thoroughly. The next morning, dish the oats into mason jars into single servings. Then, create your breakfast treat with on of these yummy variations!
Peanut Butter Surprise:
Spoon 1/2 a serving of oats into a jar. Spread 1 tbsp. of peanut butter and 1 tsp. chocolate chips. Add the rest of the oats to the jar. Top with chopped bananas, a drizzle of peanut butter and a few more chocolate chips.
Carrot Cake Delight:
Spoon 1 serving of the oats recipe into a jar. Mix 1 tsp. maple syrup, 1/2 tsp. cinnamon and 1-2 tbsp. raisins into the oats mixture. Top with shredded carrots (veggies yay!) and a few more raisins.
Strawberry Cheesecake:
Spoon 1 serving of the oats recipe into a bowl. Mix 1 tbsp. cream cheese into the oats mixture and transfer 1/2 into a small mason jar. Sprinkle 2 tbsp. crushed graham crackers and chopped strawberries into the jar. Top with the remaining oats mixture and garnish with graham cracker chunks and strawberries.
