When you have little humans running around, mornings can easily get busy when your trying to get everyone ready for the day and out the door.
We all know that breakfast is the best way to start the day, but as moms, we often focus on meeting everyone else’s needs and can forget to meet our own.
How many times have you reheated your coffee today? I think I am on #3!
So after consuming a few thousand handfuls of goldfish from the bottom of my bag only to avoid a “hangry” mommy moment, I decided that I needed to focus on getting myself fed in the mornings as well as my little ones.
Which is precisely why I am sharing 3 of our favorite healthy breakfast recipes that are guaranteed to take 5 minutes or less to make each morning!
So while your kids take 20 minutes to eat breakfast, you will have plenty of time to feed yourself as well.
3 Healthy Breakfast Recipes for the Busy Mom:
Chocolate Banana Smoothie:
After watching something on TV about the health benefits of cocoa powder, I tweaked my typical morning breakfast smoothie recipe. I have never looked back and I promise you won’t either. Unsweetened cocoa powder is low in calories, low in sugar and benefits your heart, bones, and immune system.
Ingredients:
- 1 1/2 frozen bananas
- 1 cup greek yogurt
- 1 tablespoon unsweetened cocoa powder
- 1 tablespoon chia seeds
- 1/2 cup milk (I prefer unsweetened almond milk, but any variety works)
- 1/4 cup plain Kiefer
Directions:
Blend all ingredients until smooth, pour in a glass and enjoy! The Kiefer is an optional ingredient and can be eliminated if you want a bit of a thicker smoothie. Sprinkle with chia seeds on top for a healthy garnish!
Chunky Monkey “French” Toast:
Ingredients:
- 1 piece of whole wheat bread
- 1-2 tablespoon peanut butter (or any nut butter)
- 1/2 banana
- 1 tablespoon crushed nuts of your choice (I prefer cashews)
- Maple syrup to drizzle on top
- Chia seeds to sprinkle on top as well
Directions:
Toast your bread. Thickly spread the nut butter onto the toasted bread. Top with sliced bananas and crushed nuts. Finish off your breakfast with a few chia seeds sprinkled on top drizzle with maple syrup.
Apple Banana Berry Yogurt “Parfait”:
Ingredients:
- 1 cup plain greek yogurt
- 1/2 banana diced
- 2-3 strawberries diced
- 1 tablespoon raisins (optional)
- 1 tablespoon honey
- 2 tablespoons crushed nuts (again, I love cashews)
- 1/2 apple cut into wedges for dipping
Directions:
Mix honey and greek yogurt together in a bowl. Top with diced bananas, berries, nuts and raisins. Slide your apple wedges into the bowl and dip away! If you love chia seeds as much as I do, be sure to sprinkle a few on top of your parfait!
Remember this mamas: If you are flying on an airplane, the first thing the flight attendant will tell you to do is to put your oxygen mask on first before helping others. The same thing goes for taking care of your kids. You need to eat in order to have enough energy to keep up with your family. Feed yourself, mama! Your stomach and your kiddos will thank you!
